We use almond flour because almonds are high in fat and offer a great gluten-free alternative to regular flour. I love specifically about almond flour because it has a slightly sweet taste that comes naturally from the almonds. Aside from the flavor profile, almonds have excellent nutritional value. Almond flour is incredibly rich in vitamin E. It is also rich in magnesium.

To sweeten these keto cinnamon toaster pastries, we decided on using a blend of sugars. We tried using erythritol but realized erythritol did not deliver the texture we desired. We finally decided to use a mix of allulose, monk fruit, and stevia. Using these blends of sugar allows us to sweeten our keto toaster pastries without adding refined sugars. Allulose is a monosaccharide or simple sugar. Allulose is absorbed by the body but not metabolized, so it is nearly calorie-free. Using these sugars allows people to eat our keto toaster pastries without having a rising their insulin levels.

These keto sugars are a great mix that taste like real sugar without the insulin spike. The other sugar we use, monk fruit, has no calories, carbs, or fat, which may be a great option for anyone watching their waistline. My favorite sweetener is stevia. I had to include it in the mix because stevia has 0 calories, but it is perfectly sweet. Stevia is 200-300 times sweeter than regular table sugar. I love it, and I believe it makes the filling of our keto cinnamon toaster pastries taste amazing.
