The most significant part of a birthday is not the presents, but the food. Year after year, I find myself looking forward to my birthday dinner more than any gifts. Long gone are the days where my birthday meant Chuck E. Cheese pizza. Nowadays, I am all about a home cooked dinner from my mother, or cooked by me for my loved ones. Enjoying a scrumptious meal with my favorite people is my preferred way to spend my birthday!
If you are on the Keto diet you can still have an amazing time celebrating your birthday. Your new dietary restrictions just mean that you must now get your creative juices flowing when it comes to your birthday menu. You already know that your dessert is covered with PBH Foods! At the top of my favorite keto party food list are bacon wrapped jalapeno poppers. This quick and easy to make recipe is sure to be a hit at any birthday party. All you need to make these morsels of delight is your choice of cream cheese, bacon, and of course, jalapenos. Place your bacon strips on a skillet on high heat for 2-3 minutes. This will help get rid of any extra juices that your bacon will release. If you skip this step your jalapenos will absorb this grease and become soggy in the oven. Slice your jalapenos in halves and fill with a tablespoon of cream cheese. Now comes the fun part! Take your bacon slices and wrap them tightly around your filled jalapeno halves. I recommend securing your bacon with a toothpick before placing them in the oven as bacon strips often become loose once crispy. Pop these into your oven at 375 degrees fahrenheit for 15 minutes, and serve. If you would like to add a personal touch to your Keto friendly snack, you can always change your filling, or use avocados instead of jalapenos. For my last birthday, I decided to mix in salsa verde and hot sauce into my cream cheese for an even spicier result. I assure you that these poppers will be a major hit at your next birthday, or any keto dinner party for that matter.
The next appetizer I am beyond excited to share with you all are keto friendly BLT bites. These refreshing bites are sure to be hit with all your friends and family. If you are a procrastinator (like me!), you can even wait until a few minutes before your birthday party before you put these bites together. All you need is pre-cooked bacon, cucumbers, tomatoes, mayonnaise, and cayenne pepper. To prep, quickly slice your cucumbers and tomatoes into thin slices. I recommend cutting up your bacon into 2-inch pieces. Up next, mix together 3 tablespoons of mayonnaise and ¼ teaspoon of cayenne pepper (or double up if you want to make more!). Once you have all your ingredients ready, it's time to put together your BLT bites. Take a cucumber slice and spread some of your spicy mayo on top. This will act as the glue that holds your veggies together. Add a slice of tomato and two pieces of bacon onto your cucumber. Last step, is to secure your toppings to your cucumber slice using a toothpick. This will also allow your guests to be able to serve themselves at your birthday party. You can even add thin slices of avocado to your Keto BLT bites. These will contribute to the texture of your creamy BLT bites, and leave your birthday party guests begging for more!

I am going to share with you a super simple recipe for keto friendly icing that will take your PBH keto donuts to the next level. All you need is 4 oz of cream cheese, ¼ cups butter, ½ tablespoon heavy cream, ½ powdered erythritol, and ½ teaspoon of Vanilla extract. Before you begin, make sure all your ingredients have reached room temperature. In a large bowl, beat your room temperature butter, cream cheese, and cream with an electric mixer on medium speed for 2-3 minutes. If you are using old fashioned arm strength, then mix together until your ingredients are as smooth and creamy as possible. Slowly stir in vanilla, and then stir in powdered erythritol. Then, add more powdered erythritol as needed until frosting reaches a thick, syrup-like consistency. You can spread this velvety icing on top of any of our tasty keto friendly donuts or even any of our delicious keto cookies. As soon as cake time rolls around, each of you birthday guests can have their own iced keto donut or iced keto cookie. Maybe even more than just one!
